Shipping & Delivery for a Fresh Product
Fresh Hatch green chile ships every Wednesday from early July through late October most years, and arrives the next day via overnight. Once you order, you'll see your expected ship date at the top of this page — that's the Wednesday we'll pick for you.
Need it by a specific date, or want to delay until later in the season? Place your order whenever you like, then reply to your order confirmation with the week you want. We can hold your order until any Wednesday in the harvest window, or change your pick date if your plans shift. There's no fee to delay a fresh-chile shipment, and we'll send you tracking the morning your box leaves the field.
Already ordered and your box hasn't arrived yet? Overnight shipments very occasionally get held up by weather or a carrier issue. If your tracking shows a delay or your box hasn't arrived by end of day Thursday, email us — every fresh order is covered by the ShipAid delivery guarantee, so a missed delivery date or a spoiled-on-arrival box gets replaced on the next harvest day at no charge.
Choosing Between Our Chile Products
If this is your first order and you're not sure which heat level you should choose: most families land on Medium (Big Jim, Charger). It's our most popular, has the classic Hatch flavor without overwhelming heat, and works in everything from green chile stew to cheeseburgers. The mildest chile we grow is the 1904 in our Mild box — it has full Hatch flavor with almost no burn, and it's the right pick for kids, mild-heat households, or anyone making chile rellenos. The difference between our fresh, frozen-roasted, and dried chile products is timing. Fresh is what's in the field that week — you do your own roasting, and you get the brightest flavor and firmest pod for rellenos. Flame-roasted frozen is the same year's crop, fire-roasted in our Hatch Valley facility within hours of picking, then frozen — best for anyone who wants ready-to-cook chile year-round. What's Actually in the Box
A 5lb box averages 35–45 pods, a 10lb runs 70–90, and a 25lb runs 175–225 — exact count depends on pod size that week. Pods arrive whole and unroasted, with stems and seeds intact. They are not hand peeled — peeling happens after you roast. Every box is one heat level; we can't split a single box into half mild and half hot, but you can place a 5lb mild and a 5lb hot in the same checkout for a half-and-half order shipped together.

Every fresh-chile box already ships overnight at no upgrade cost — that's how we keep it fresh, so there's no slower economy method to choose from on this product. If you need a Saturday delivery or a priority air upgrade for a specific arrival date, email us before your Wednesday pick day and we'll quote the cost.
Can I order half mild and half hot in a 10-pound box?
We can't split a single 5lb or 10lb box across two heat levels — each box is packed and labeled as one heat level. If you want a half-mild / half-hot split, place two 5lb orders (one mild, one hot) in the same checkout and we'll ship them together in one harvest-day shipment.
Will my order spoil if there's a shipping delay, and what if it arrives spoiled?
Fresh chile travels with cold packs and is built to stay good for 24–48 hours in transit. Every fresh order is covered by the ShipAid delivery guarantee — if your box arrives spoiled, thawed, or hot to the touch, send us a photo within 24 hours of delivery and we'll replace it on the next Wednesday pick at no charge. We harvest fresh Hatch green chile from early July through late October most years, and we ship every Wednesday during that window. Outside the season, fresh isn't available — but our flame-roasted frozen chile is the same year's crop, picked and roasted at peak ripeness. We'll post a banner at the top of this page if a weather event causes a shortage.
Are the dried ristras you sell edible?
Some of them, yes. We sell two ristra options — an Edible (Not Treated) version that's pure sun-dried Sandia chile and can be cooked with, and a Not Edible (Treated) version dipped in clear lacquer for longer-lasting display.
